Carrot Cake Cookies are the fifteenth of my 25 Cookies of Christmas.<\/p>\n<div class=\"ingredients\">\n<h4>Ingredients<\/h4>\n<ul class=\"ingredients\">\n<li>1 pkg carrot cake mix (any brand)<\/li>\n<li>1 stick butter or margarine, melted <\/li>\n<li>2 eggs, beaten <\/li>\n<li>&frac12; cup chopped pecans or walnuts <\/li>\n<li>1 cup shredded carrots<\/li>\n<li>1 cup raisins <\/li>\n<li>(optional) &frac12; cup shredded pineapple<\/li>\n<\/ul>\n<\/div>\n<div class=\"instructions\">\n<h4>Directions<\/h4>\n<ol class=\"instructions\">\n<li> Preheat oven to 350 &deg;F.<\/li>\n<li>Spray cookie sheets with nonstick spray. <\/li>\n<li>Combine cake mix,  eggs, and butter.<\/li>\n<li>Stir in nuts, carrots, raisins, and, if desired, pineapple. <\/li>\n<li>Drop dough by spoonful onto prepared cookie sheet <\/li>\n<li>Bake 8 to 10 minutes. <\/li>\n<li>Cool on wire racks, and store in a tightly covered container. <\/li>\n<\/ol>\n<\/div>\n<table>\n<tr>\n<td>\n<p class=\"duration\"><span class=\"hrlabel\">Time Required: <\/span><span class=\"hritem\">25  minutes<\/span><\/p>\n<\/td>\n<td>\n<p class=\"yield\"><span class=\"hrlabel\">Servings: <\/span><span class=\"hritem\">2 dozen<\/span><\/p>\n<\/td>\n<\/tr>\n<\/table>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>We have a family weakness for carrot cake, so a cookie that mimics the taste of the decadent cake was a sure hit.
