They&#8217;re the kind of old-fashioned cookie that you&#8217;re not likely to get unless you can make them yourself. The recipe was passed to us by my mother&#8217;s father&#8217;s mother, Kate. Pineapple Cookies are the twenty-third of my 25 Cookies of Christmas.<\/em><\/p>\n<div class=\"ingredients\">\n<h4>Ingredients<\/h4>\n<ul class=\"ingredients\">\n<li>1 cup sugar<\/li>\n<li>2 tbsp cornstarch<\/li>\n<li>1 can crushed pineapple<\/li>\n<li>&frac34; cup granulated sugar<\/li>\n<li>&frac34; cup brown sugar<\/li>\n<li>1 cup shortening<\/li>\n<li>3 eggs<\/li>\n<li>&frac12; cup warm water<\/li>\n<li>3 cups flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 tsp maple flavoring<\/li>\n<li>1 tsp vanilla<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1 cup chopped nuts<\/li>\n<\/ul>\n<\/div>\n<div class=\"instructions\">\n<h4>Directions<\/h4>\n<ol class=\"instructions\">\n<li>Preheat oven to 375 &deg;F.<\/li>\n<li>Grease and flour cookie sheet<\/li>\n<li>Cook sugar, cornstarch and pineapple over medium heat until thickened. Set filling aside to cool.<\/li>\n<li>Cream together sugars, shortening, and eggs.<\/li>\n<li>Add remaining ingredients.<\/li>\n<li>Drop batter by spoonfuls onto prepared cookie sheet. <\/li>\n<li>When the sheet is full, drop a smaller spoonful of the pineapple filling into the center of each cookie. <\/li>\n<li>Bake 15 minutes.
