A recipe from my mother&#8217;s Betty Crocker cookbook, these are the cookies she made for every occasion when we were younger. Probably the simplest cookie I&#8217;ve ever made, but also my favorite. Ethel&#8217;s Sugar Cookies are the fourth of my 25 Cookies of Christmas.<\/em><\/p>\n<div class=\"ingredients\">\n<h4>Ingredients<\/h4>\n<ul class=\"ingredients\">\n<li>&frac34; cup shortening (optionally &frac12; butter)<\/li>\n<li>1 cup sugar<\/li>\n<li>2 eggs<\/li>\n<li>&frac12; tsp vanilla extract <\/li>\n<li>2&frac12; cups all-purpose flour<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 tsp salt<\/li>\n<li>Sugar for decoration<\/li>\n<\/ul>\n<\/div>\n<div class=\"instructions\">\n<h4>Directions<\/h4>\n<ol class=\"instructions\">\n<li>Preheat oven to 400&deg;F.<\/li>\n<li>Cream shortening, sugar, eggs and flavoring together.  <\/li>\n<li>Measure flour by dip-level-pour, or by sifting.  <\/li>\n<li>Blend flour, baking powder and salt.<\/li>\n<li>Stir dry ingredients into the wet ingredients.<\/li>\n<li>Chill at least 1 hour.  <\/li>\n<li>Roll 1\/8&#8243; thick on floured board.  <\/li>\n<li>Cut with 3&#8243; cookie cutter.  <\/li>\n<li>Place on ungreased baking sheet, sprinkle with sugar or other decorations, and bake for 6 to 8 minutes.<\/li>\n<\/ol>\n<\/div>\n<div class=\"variations\">\n<a name=\"variations\"><\/a><\/p>\n<h4>Variations<\/h4>\n<ul class=\"variations\">\n<li>Decorative sugar is the traditional topping, but any sugar or decorative sprinkle can work. Try cinnamon sugar, nonpariels, or a seasonal topping like Wilton&#8217;s Sprinklings. Can also be frosted after baked and allowed to cool completely. <\/li>\n<li>Substitute lemon flavoring for the vanilla extract.<\/li>\n<li> Add chocolate chips or your favorite stir-ins and use the drop cookie method for a nice change from your basic sugar cookie..<\/li>\n<li>For drop cookies, skip the refrigeration, and drop by rounded spoonfuls ont baking sheet. <\/li>\n<li>For a basic coffee cake, put dough in greased square pan, sprinkle with sugar, and bake 20-25 minutes.<\/li>\n<\/ul>\n<\/div>\n<table>\n<tr>\n<td>\n<p class=\"duration\"><span class=\"hrlabel\">Time Required: <\/span><span class=\"hritem\">45 minutes<\/span><\/p>\n<\/td>\n<td>\n<p class=\"yield\"><span class=\"hrlabel\">Servings: <\/span><span class=\"hritem\">4 dozen<\/span><\/p>\n<\/td>\n<\/tr>\n<\/table>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>I have no idea who Ethel is, but these are the sugar cookie against which all others are measured.
