It looks like an upscale version of the dish my brother named &#8220;Rice with Too Much Rice.&#8221; He was 4 or 5, and thought it was Chicken and Rice Soup with more rice than normal.<\/em><\/p>\n<p class=\"summary\"><em>This variation from Swanson adds spinach and Parmesan. Can&#8217;t wait to try it out with some Italian-marinated chicken breasts or pork loin.<\/em><\/p>\n<div class=\"ingredients\">\n<h4>Ingredients<\/h4>\n<ul class=\"ingredients\">\n<li><a href=\"\/cooks\/images\/ItalianRice-large.jpg\" target=\"_blank\"><img decoding=\"async\" src=\"\/cooks\/images\/ItalianRice-150.jpg\" alt=\"Simmered Italian Rice\" border=\"0\" align=\"right\"><\/a>1 &frac34; cup chicken broth<\/li>\n<li>1 tsp Italian seasoning<\/li>\n<li>&frac34; cup uncooked long-grain white rice<\/li>\n<li>1 cup chopped fresh spinach (or thawed frozen spinach) <\/li>\n<li>&frac12; cup grated Parmesan cheese <\/li>\n<\/ul>\n<\/div>\n<div class=\"instructions\">\n<h4>Directions<\/h4>\n<ol class=\"instructions\">\n<li>Heat broth and Italian seasoning in 2 qt. saucepan over medium-high heat to a boil.<\/li>\n<li>Stir in rice and spinach.<\/li>\n<li>Reduce heat to low.<\/li>\n<li>Cover and cook 20 min or until rice is tender.<\/li>\n<li>Stir in the cheese.<\/li>\n<li>Garnish with additional Parmesan cheese, if desired. <\/li>\n<\/ol>\n<\/div>\n<div class=\"variations\">\n<a name=\"variations\"><\/a><\/p>\n<h4>Variations<\/h4>\n<ul class=\"variations\">\n<li>A vegetarian version, made with vegetable broth, would be just as tasty.<\/li>\n<li> If you&#8217;re out of Italian seasoning, substitute 1\/3 tsp each of  oregano,  marjoram, and  basil.<\/li>\n<li>Saute 1 small onion, diced and a clove of garlic, in some butter till transparent, and add with the rice and spinach. <\/li>\n<li>A blend of Romano and Parmesan cheese will work as well. <\/li>\n<\/ul>\n<\/div>\n<table>\n<tr>\n<td>\n<p class=\"duration\"><span class=\"hrlabel\">Time Required: <\/span><span class=\"hritem\">35 minutes<\/span><\/p>\n<\/td>\n<td>\n<p class=\"yield\"><span class=\"hrlabel\">Servings: <\/span><span class=\"hritem\">4<\/span><\/p>\n<\/td>\n<\/tr>\n<\/table>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Found this tasty-looking recipe on the September issue of All You.
