The official name came from the carton of Hormel corned beef we picked up at Sam&#8217;s. It&#8217;s a filling meal and rarely leaves us with any leftovers.<\/em><\/p>\n<div class=\"ingredients\">\n<h4>Ingredients<\/h4>\n<ul class=\"ingredients\">\n<li><a href=\"\/cooks\/images\/cornedbeefhash-large.jpg\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" src=\"\/cooks\/images\/cornedbeefhash-270.jpg\" alt=\"Corned Beef &amp; Vegetable Skillet Dinner\" width=\"270\" height=\"203\" border=\"0\" align=\"right\"><\/a> \u00bd cup chopped onion\n<\/li>\n<li>2 Tbsp margarine or butter <\/li>\n<li>1 bag frozen cubed Potatoes O\u2019Brien\n    <\/li>\n<li>2 (12 oz) cans corned beef, cubed\n      <\/li>\n<li>1 (10 oz) package frozen mixed vegetables, thawed &#038; drained\n<\/li>\n<li> \u00bd tsp black pepper\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"instructions\">\n<h4>Directions<\/h4>\n<ol class=\"instructions\">\n<li>If necessary, microwave frozen mixed vegetables about 3 minutes to thaw. <\/li>\n<li>Spray large skillet with non-stick cooking spray.<\/li>\n<li>Saute the onion in margarine or butter until tender.  <\/li>\n<li>Stir in Potatoes O\u2019Brien.  <\/li>\n<li>Cook, stirring occasionally until potatoes are golden brown.  <\/li>\n<li>Add corned beef, vegetables and pepper.  <\/li>\n<li>Cook until thoroughly heated. <\/li>\n<\/ol>\n<\/div>\n<div class=\"variations\">\n<a name=\"variations\"><\/a><\/p>\n<h4>Variations<\/h4>\n<ul class=\"variations\">\n<li> Substitute any frozen vegetables you like if mixed vegetables aren&#8217;t to your taste. . A bag of peas and carrots would work just as well. <\/li>\n<li>If you don&#8217;t have a bag of Potatoes O&#8217;Brien on hand, use regular cubed hash browns. Just double the onion and add a &frac12; cup to a cup of chopped green or red pepper. Saute the onion and peppers before adding the hash browns to the pan. <\/li>\n<li>Sprinkle individual servings with shredded cheese, if desired.
